It has been hot, hot, hot this month. While I was in Santa Fe (where it’s always hot this time of year), Alaska was gorgeous. But, this past week has been hot enough that the inside of the house went over 80 degrees.
I am thankful that we are now entering several days of more moderate temperatures with rain. By next week my main living space may now longer be at the 80-degree mark.
When it gets that warm, I love options for cooling down. This recipe can be made with or without alcohol in it.
If it is exceptionally hot, then I would definitely go for the non-alcoholic version.
Dark and Shandy Cocktail
This drink calls for a simple syrup. Do not feel like you need to go buy it! Just combine 1 cup each of sugar and water in a small saucepan. Heat it long enough for the sugar to dissolve. Allow it to cool before using in your drink.
If you plan to make a lot of cocktails, just make a bigger batch of the simple syrup with a 1:1 ratio of sugar to water.
- 1 Cup simple syrup
- ⅓ Cup minced ginger
- ½ Cup key lime juice
- 3 12 oz. Beers
- 4 Tbsp dark rum
- Key lime slices
- Mint sprigs
- In a pitcher add the syrup, ginger, and key lime juice. Mix for 2 minutes.
- Fill glasses with ice to the brims.
- Fill the glasses halfway with the ginger-lime syrup.
- Complete with beer and top with 1 tbsp dark rum.
- Garnish with a key lime slice and a mint sprig.
For non-alcoholic version substitute non-alcoholic beer and ½ tsp of blackstrap molasses for the dark rum.
